The lees are the natural yeast deposit that forms at the bottom of the vat after the wine has fermented. Distilled, they produce an eau-de-vie reputed to be finer and more floral than a marc eau-de-vie. Ours is made from the lees of our own Perroy wines, in the Vaud Côte.
Marc is distilled from the solid residues of the grape (skins, pips), whereas the lees come from the wine’s yeast deposit. The marc eau-de-vie is full and warming, with dried-fruit notes; the lie eau-de-vie is generally more delicate, floral and velvety. They are two digestifs with quite distinct characters.
Enjoy it as a digestif, at room temperature, in a small tulip glass, accompanied by a coffee, a chocolate dessert or some foie gras. Store the bottle upright, away from light: a spirit no longer ages in the bottle and keeps for a very long time. To be savoured in moderation, at 43%.
